I have been thinking a long time how to altern dairy yogurt, since I am a huge yogurt lover (frozen yogurt is the best) and since I went vegan few months ago. I also wanted to avoid soy in my diet mainly because of its problem with estrogen. If you haven’t heard about why we shouldn’t eat soya on daily basis I highly recommend you to google it. But now back to my recipe!
My goal while creating this recipe was simple – vegan yogurt which is easy to make at home – without using any yogurt machines. I own yogurt machine and I use it a lot, but I was so nice that I let my sister to borrow it and haven’t got it back from her yet. I think she loves it as much as I do. But hey, I love her just as much as I love yogurt so I had come up with an idea how to make one without using yogurt machine, right?
For this recipe I use my beloved cashew nuts, which are low in fat comparing to other nuts and they are cholesterol free! Cashew are really great for our heart health since they are rich in antioxidants. And ladies (and men) cashew nuts are really rich in copper which is absolutely amazing for our hair! And who doesn’t love the taste of cashew nuts?!
Yogurts are known for probiotics and its benefits for our digestive system. I add probiotics to this yogurt as well, so you will get the good into your body while eating this delicious cashew yogurt! I use my probiotic capsules which are vegan friendly (be careful there are still some probiotic capsules which are not vegan!).
I love everything sweet, so that means I also have to have my cashew yogurt pretty sweet. To make it sweet I use date syrup usually. I love dates in general. You can add your favourite natural sweetener into the yogurt while making it, but I prefer using my syrups once I am serving it. But it’s completely up to you. I also love to get my sweetness from fresh fruit and agave syrup. Yum!
This yogurt is absolutely delicious for breakfast bowls with fresh fruits and seeds, for smoothies and for making your very own frozen yogurt. Just pop this yogurt into the freezer for a while and it’s the best ice cream ever! Topped with juicy mango a agave syrup?! Yes please!
Since this recipe is based on the simplicity you will not need anything special to be able to follow the steps. No fancy tools, just blender! So let’s do it!
Toppings: date syrup, dates, fresh fruit, dried fruit, seeds, dark chocolate, coconut etc.
- Put cashew nuts into big bowl and let them soak in the water for about 2 hours.
- After soaking them make sure you drain and rinse them very well.
- Place cashew nuts into the blender.
- Add water and mix well until smooth and blended.
- Transfer mixture into clean bowl.
- Mix in probiotics (using wooden spoon is the best for this step).
- Cover the bowl with clean towel and let it sit in warm place for about 1 day.
- Transfer to a jar with lid and you can keep your cashew nut yogurt in refrigerator for about one week.
