If you ever find yourself staring into your kitchen cupboards, wondering what you can make that will be delicious, nutritious and not take all night, I’ve got just the recipe for you. This recipe is super easy to make and full of great-for-you veggies. Plus, it’s ready in only about 20 minutes, making it the perfect weeknight go-to meal. Hamburger Mash #Paleo
Cook Time: 20 minutes. Serves 4.
- 1 lb hamburger
- 1 clove garlic
- 1/2 an onion, diced
- 2 zucchini, diced
- 2 tomatoes, diced
1. Sprinkle the hamburger with salt, pepper and paprika to taste and cook over medium heat until browned. Dice the vegetables while the hamburger is cooking. Remove the hamburger to a plate and drain most of the juices, leaving just enough to coat the pan and keep the vegetables from sticking.
2. Sautee the garlic in the hamburger juices for 2 minutes. Add onions. Add zucchini. Return the hamburger to the pan and stir. Cook until the onions are translucent and the zucchini is tender, stirring occasionally.
3. Stir in the tomatoes and cook until heated through. Add additional seasoning if needed.
If you are looking to get creative in the kitchen, this is the perfect recipe to experiment with. This very forgiving recipe can also be tweaked as needed to accommodate whatever fresh, canned or even frozen veggies you have on hand or prefer.
