Homemade Chicken Noodle Soup with Gluten Free Noodles
What is better cooking on the stove on a cool fall day? Well chicken noodle soup of course. And, when made with Gluten Free noodles it gives this soup a bit of a twist, for me, because then I can eat more and not suffer with the full belly from noodles made with wheat or white flour. YUM! And, I did eat a ton!!
I start my homemade soup by placing a whole chicken in a huge stock pot and covering with water and spices and simmer all day. Simmering slow on med heat until the mean falls off the bones. You can see all the nice oils from the chicken glistening in the water. That my friends is pure natural chicken flavor.
Noodles Recipe ~
1 egg
1 tsp water
1 tsp oil ( olive oil preferred )
Dash of Salt
xanthan gum – use according to package directions
Gluten Free Flour ~ I used Bobs
Mix above ingredients together and blend in Gluten Free Flour, enough to make a ball that holds together.
I multiply my recipe by 6, to make a nice huge pot of soup.
Sprinkle flour on hard surface and roll out the dough. I let the dough rest a few times and roll till thin. I cut with a pizza cutter into the size noodles I like. Then, I let the noodles dry while my chicken stock is cooking.
When the chicken falls off the bone, I scoop out all the chicken and place on a pan, and pick it all apart putting the chicken pieces back into the stock and add the rice and cook for 30 minute. I add a bit of chicken stock, but that is a personal preference.
Then add the noodles and cook until the noodles are soft.
Then, we enjoy! I do also add carrots or potatoes, but wasn’t in the mood for those this time.
