My husband and I totally love banana bread!! But, with me trying to eat more gluten free, and him trying to steer clear of lots of carbs, I decided to try my hand at a gluten free, low carb banana bread. This is as close as I could come. I don’t know what the carbs per slice are, but the flour I used is almond meal flour so it has low low carbs. Regardless, it is healthier than any banana bread I have ever made, and tastes just as good, if not better. This bread is great, and really a good one for those staying away from gluten. Mix all dry ingredients in one bowl and set aside. Mix wet ingredients in another bowl. Add wet ingredient to dry ingredients and blend well. Pour into large bread pan. Bake at 350 degrees, middle rack, for 40-50 min or until toothpick inserted in middle comes out clean.
