Here in Minnesota the weather is warm, the days are long and the list of fun to be had is just endless. Our summers are just not long enough to fit everything a person could do, into them. But, there are a few things every summer that we make sure we do, and one of them is the Valleyfair Food Truck Festival. This is our second year of attending, and we absolutely love it!! We always make Valleyfair a summer “to-do” event, but now that we know about the Food Truck Festival they have we make sure it’s that weekend that we go.
My son and I are very close, as he is my only child. Since he became an adult and moved out he has never lived more than 30 minutes from me. Even though we were both busy, and didn’t see each other on a daily basis, I knew that he was only 30 minutes away and if I needed to see him I could easily at any time. Well, just this January he got a great opportunity for a good job and moved almost 4 hours away from me. I am so happy for him, but yet, very sad because he is no longer 30 minutes from me. However, I know he is where he will excel and that is what matters. So, when I was asked to cover the Valleyfair Food Truck Festival, and knew that he loves Valleyfair and he lives only 30 minutes from Valleyfair, I knew it was the perfect opportunity to have a fun family weekend with my husband, son, son’s girlfriend Maddy and myself. So, we packed the bags, grabbed our dog and headed down to see our son.
We headed to the park Saturday morning and got our tickets and food tokens and headed in for a day of fun. We knew right away that we wanted to rent a locker to put all our stuff in, so we could get our fill of riding all the amazing coasters that Valleyfair has to offer. Of all the parks I visit, Valleyfair has some of the best in my opinion. If you want to be thrilled, you have got to check them all out! We threw all our belongings into a locker and headed for the Corkscrew first. My hubby is a bit scared of coasters, and he has to break the ice with his favorite. We then hopped around and did them all, and some a few times. Only one we missed was Steel Venom, which is one of my favorites but we were all getting super hungry and wanted to head to the Food Trucks to samples all the yummy foods they had to offer.
There were so many trucks and the smell coming from them was so mouth watering. By the time we got to the food truck area it was pretty packed so I couldn’t get that many good pics of the trucks as I didn’t want to have to ask people to move, and really hate having strangers in pictures. (sometimes it can’t be avoided). We eat took a token and headed to get something, so we would have 4 different things to try. I got Brussels sprouts and sweet potato fries from Russel’s Traveling Kitchen, my son got something from Smashed, (it was potatoes with hot dogs and cheese), my husband got hibachi shrimp from Samurai Teppanyaki, and Maddy got a gyros from Pharaohs Grill. All were a huge hit and we sampled each others foods. Then hubby wanted to try the mojito lime taco’s from the Motley Crew’s Grill. I have to say, those mojito lime taco’s were probably the best chicken taco’s we have ever had!
One of the first things I saw when we entered the food truck area was the waffle stand. I LOVE waffles and knew I for sure had to get me some! So, I headed over to that stand, and while waiting for my waffle had a great visit with a guy working it. He was telling me how Nordic Waffles was born. Very interesting story. ( for another blog post ). We ended our dining by cooling off with some Fro Yo Soul frozen yogurt. David and I went and filled up 2 cups of frozen yogurt with all the fixins and he shared his with Maddy and I shared mine with my hubby. Silly me, being so excited to eat frozen yogurt forgot to snap pics of them. Frozen yogurt is one of my favorite treats that I don’t allow myself very often, so I was a bit excited and drooling!
After filling our bellies we headed to the far end of the park and did one of the water rides, Thunder Canyon, and then another coaster, and then hubby and Maddy did the Wave. Then, our day was done. Between the walking, the rides, the heat and the good food we all were ready for calling it a night. It’s always so hard to leave Valleyfair because it’s so much FUN!!

On a side note, but super cute ~ While walking thru the park we passed a guy and a young boy and I seen the young boy tap the guy ( his dad ? ), and I stopped to see what was up, and the young boy was wearing a shirt that was similar to the one my hubby was wearing. He was so cute, and I asked if I could get a picture of him with my hubby and share online. He was all for that. Here they are sporting similar shirts.
