Keto Chocolate Zucchini Donuts

A healthy spin on donuts, for those doing the Keto way of eating, low carb, or gluten free.
  • 1 Cup Almond Flour
  • ½ Cup unsweetened Cocoa Powder
  • ½ tsp Salt
  • ½ tsp Baking Soda
  • ¾ tsp cinnamon
  • ⅓ Cup Swerve
  • 2 Eggs
  • ¾ TBS Coconut Oil - melted
  • ¾ TBS Butter - melted
  • 1 TBS Unsweetened Almond Milk
  • 1 Cup Grated Uncooked Zucchini, water squeezed out
  1. Preheat oven to 350 degrees F.
  2. Add eggs and sweetener to a bowl and beat 2-3 min. Melt butter and coconut oil and add to bowl slowly. Add Almond milk to mixture slowly. Beat another minute. Set aside.
  3. Note ~ make sure the butter and oil are barely melted, and not bubbling or they will slightly cook your eggs. You are not making scrambled eggs here ;)
  4. Mix remaining dry ingredients together.
  5. Grate zucchini and roll in paper towel and squeeze out as much liquid as you can.
  6. Add wet mix to dry ingredients and blend well by hand. Add grated zucchini and continue mixing by hand till all well incorporated.
  7. Spray a donut pan and fill each donut slot with mixture to be level with pan.
  8. Bake for 20-25 min or until toothpick comes out clean.
  9. Let cool a bit before removing from pan. Let fully cool on wire rack.
  10. I sifted a bit of confections Swerve on top of these and it was divine!
