Easy Fried Rice
Easy fried rice recipes pop up all over the internet, but most of them are not clean eating approved like this one. Chinese food is known for being high in sodium, cholesterol, fat and calories. All things we do not need an excess amount of. Once you try this recipe, any craving you have for Chinese take out will be curbed by this, you will enjoy it so much more knowing it is healthy.
Remember, clean eating is about simple, fresh ingredients like vegetables and whole grains. All of which are jam packed into this easy fried rice recipe. It takes literally 15 minutes and pairs amazingly with our clean egg rolls we will be posting soon!
Note* This recipe uses a very small amount of soy sauce, though it is high in sodium, the amount we use is so little it evens out with everything.
Here is how to make it:
Prep Time: 5 min | Cook Time 10 min | Total Time: 15 min
- 1 bag of Multi Grain Minute Rice
- 1/2 cup pea pods, cut in half
- 2 carrots, diced
- 1 onion, diced
- 2 mushrooms, sliced
- 1/2 cup bean sprouts
- 1 garlic clove, minced
- 1 tablespoon soy sauce
- 1 teaspoon coconut oil
- Prepare the rice per manufacture instructions
- Heat the coconut oil in a skillet over medium heat.
- Add the onion, garlic and carrots. Stir fry for about 3 minutes.
- Fold in the rice, stir.
- Add the pea pods, bean sprouts and mushrooms. Cook until tender.
- Stir in the soy sauce at the very end.
