Cheesecake with Chocolate and Orange
This elegant dessert is a perfect choice for a dinner with guests. If you look at most cakes prices you’ll find a home-made chocolate cake pretty affordable. Here is what you’ll need:
- 75g butter
- 140 g sugar
- 200 g biscuits with dark chocolate
- 4 eggs and 2 egg yolks
- grated zest from 1,5 oranges
- 150 ml double cream
- 2 tubes of cream cheese (around 280 g each)
- 50 g of grated almond chocolate
- 50 g of grated orange chocolate
- 4 tbsp orange liqueur
Now let’s see what you shall do with these ingredients. Start by greasing the cake tin and handling the base. You should firstly turn the butter and biscuits into small crumbs and lay them in the tin. Then press them until the surface is leveled and put it away in the freezer for about half of hour. Take a piece of foil. It should be large enough to fit the cake. Wrap the foil around the cake and put it in a roasting tin. The oven should have an average temperature of 170C.
Then you move on to the next stage: preparing the filling. Mix the eggs and the egg yolks with a blender until they become a homogeneous mass. Add the rest of the ingredients: cheese, sugar, liquor, cream, orange zest and mix them all together. Put the filling on the base. Pour boiled water into the roasting tin so that the content rises to almost 2 cm.
Put the tin in the oven and leave it to roast for about an hour and a quarter. When it’s over, pull the cake out and add the grated chocolate on top of it. Then you should let it cool in water bath for around 20 minutes, then take it out and leave it to chill for a day.

White Cake with Orange Buttercream and Cranberry Filling
Here is what you need:
- to prepare the buttercream
- 1 cup of softened butter
- ¼ teaspoon of salt
- 2 tablespoons of fresh orange juice
- 1,5 tbsp of milk
- 1 teaspoon of vanilla extract
- 1 package of powdered sugar (32-oz)
- 1 package of cream cheese (8-oz)
- to prepare the filling
- ¼ cup of fresh orange juice
- 1,5 cups of cranberries
- ¾ cup of granulated sugar
- 1 jar of cherry preserves (12-oz)
Now let’s see how to proceed. You start preparing the filling by putting the jar cherry preserves, orange juice, cranberries and granulated sugar to boil. Wait for 5 minutes and you stir in the meanwhile. If the cranberries start popping, you can stop. Take just one cup of the cranberry mixture and place it separately in a bowl. Stir the remaining mixture which will be the topping and place it in a different bowl. Then both bowls should be left to cool for roughly an hour. After that, cover them and chill for around 8 hours.
The next step is preparing the buttercream. You have to beat the cream cheese, salt, and butter with a mixer for around 2 minutes. You can set it to medium speed and add the orange juice and powdered sugar in the meanwhile. Then set the mixer at low speed and carry on until all the ingredients become homogeneous. Also, add the vanilla and milk to this mixture. Continue until the cream is consistent.
Final stage: put everything together. Put the base cake layer on a platter. Place 1,5 cups of buttercream in a plastic freezer bag and cut it at one edge. Pipe the buttercream around the layer then add the cranberry filling on the cake layer and spread it until it reaches the buttercream. Put the next cake layer on and repeat the same process. On top of the last layer, place the rest of the buttercream. Spread the rest of the cranberry topping over it, adding whole cranberries on top.

The necessary ingredients are:
50 g of ground almonds
1 teaspoon of baking powder
1 teaspoon of bicarbonate of soda
200 g of plain flour
1,5 teaspoons of cinnamon
25 – 30 g of chopped pistachios
100 g of diced marzipan
50 g of toasted almonds (flaked)
100 g of golden caster sugar
50 g of dried cherries
25 of raisins
50 g of dried apricots
natural yogurt (125 ml)
100 g of butter (not salted)
2 tablespoons of icing sugar
1 tablespoon of almond extract

- Here is what you need to do. Place the muffin cases in a tin and turn on the oven. The necessary temperature is somewhere between 200 – 220 C. You need to put together the sugar, flour, ground almonds, bicarbonate of soda, baking powder, cinnamon, marzipan, dried fruit in a large bowl. Then mix together the butter, eggs, almond extract, yogurt and pour the mixture over the rest of the ingredients.
Mix them all together and pour the content into the muffin cases. Put the tin in the oven. After 5 minutes, lower the temperature to roughly 170 C. Let them bake for another 15 minutes then pull them out. Let them cool down for around 6 minutes. Then sieve a mixture of cinnamon and icing sugar over them.
