Halve and pit a medium peach. Spray a grill pan with nonstick spray, and bring to medium-high heat on the stove.
Add peach halves, cut side down, and cook for 3 minutes, or until dark grill marks form. Flip peach halves and cook
until hot and slightly softened, about 2 minutes. Plate with the cut sides up, and top each half with 2 tablespoons of fat-free
vanilla Greek yogurt (like the kind by Chobani). Yum!
