Sun Dried Tomato Chicken Grilled Pita
Sun dried tomato chicken is a classic favorite in our house. Usually I mix up a sauce and bake the chicken right in it with cherry tomatoes and other vegetables. I kind of became obsessed with this sun dried tomato sauce and set out to create more delicious recipes to use it in, like this sun dried tomato chicken in a grilled pita! The chicken is also grilled so there is a great char and smokey flavor going on that pairs amazingly with the sun dried tomato sauce.
The pitas used in this recipe are a carb lover’s dream. Joseph’s brand Flax Oat Bran and Whole Wheat 50 calorie Pita’s. You can find them in most any grocery store near the deli. The are very low in carbs and high in Omega 3 fatty acids and fiber. You will feel as full as if you tore into a loaf of white Italian bread. We used 2 for this sandwich and still it was less calories than bread for a regular sandwich. Of course grilling the pita puts flavor over the top!
What you need:
- 2 Whole grain pitas (or use one and build it as a pocket)
- 1 8oz boneless, skinless chicken breast
- 1/4 cup sun dried tomatoes
- 1 garlic clove
- 2-3 basil leaves
- 1/3 cup Olive Oil
- Green Onion
- Goat cheese (optional)
- Salt & pepper
What to do:
Start by cutting the chicken through the side to butterfly it open. Season with salt & pepper, drizzle with Olive Oil.
Place the chicken in a hot grill pan or on the grill and cook for 5-6 minutes on each side (times may vary due to thickness). Remove the chicken and set aside.
Give the pitas a quick grill!
In a single serve blender- add the sun dried tomatoes, basil, garlic, 1/3 cup Olive Oil and pinch of salt & pepper. Puree until smooth.
Brush the sun dried tomato sauce onto the pitas, top the bottom pita with some crumbled goat cheese (optional).
Place the chicken on the pita, top with green onion and lettuce! Don’t worry about the lettuce, it won’t get soggy. The chicken was set aside to rest and will be slightly warm, not hot. Plus, you will devour this so fast!
