Gluten Free Oatmeal Nut Butter Cookies



Gluten Free Oatmeal Nut Butter Cookies

If you are looking for a quick, yummy, very few ingredients and Gluten Free cookie than you can stop searching and make this one.


1 1/4 C.   Nut Butter  ( I used 1 Cup Almond Butter and 1/4 Cup Peanut Butter)

1/4 C.  Nutella

2 Eggs

1  1/2 tsp. Baking Soda

1 C.  Brown Sugar

1/2 C.  Gluten Free Oats

1/2 C.  White Chocolate Chips  (you can omit these or use whatever kind you like)


Mix all ingredients.   Drop by teaspoon onto a cookie sheet covered with parchment paper (you don’t need to use parchment if you don’t want to).


Bake in oven @ 350 degrees for 10 min.


Cool slightly before removing from cookie sheet.

  1. These sound delish, I am wondering what you would think about adding protein powder to them, to make your own protein bars? If I wanted to add protein, would I have to change the amount of liquid I used? I know baking is a science, and I don’t want to mess it up! Thanks. Laura

    • There is no liquid in these cookies, so adding the protein powder might make them hard. They don’t need any more protein as they have a good amount of nut butter in them. Try them… and let me know 🙂

      • Made the cookies! I used Sun butter instead and hershey’s chocolate almond spread in place of nutella….they are excellent! Will make these again for sure…thanks for sharing this yummy recipe!

        • Thanks 🙂 Glad you liked them. I think they are the ONLY cookie we will be eating from now on. First cookie I can eat, and not feel icky after. And, they are full of protein 🙂
