Thanksgiving is approaching fast, and I know I am planning my menu for this years feast.   However, I thought I would change it up a bit and do something that had a bit of a healthy twist.  Yeah,  I know when you think of Thanksgiving it is hard to put the word “healthy” with it.  But, if you check out my collection of recipes you will see that you can eat foods that have a health benefit, when you add pumpkin to your recipes.

1 cup of pumpkin has 200 % of your daily vitamin A

3 grams of fiber per cup of pumpkin

49 calories per cup

Pumpkin seeds have phytosterols, which helps fight the “bad” cholesterol

Pumpkin contains antioxidant beta-carotene, which helps with Cancer prevention

The free-radical-neutralizing powers of the carotenoids in pumpkin help fight wrinkles

Helps to boost your mood.  One handful of pumpkin seeds are rich in the amino acid tryptophan, known to boost mood

564 milligrams of potassium to help refuel after a workout

11 milligrams of vitamin C per cup of pumpkin
