• Fresh Chia Seed Pudding

I love eating healthy but sometimes it’s not as easy as I would like. That is why I love to do a little prep here and there so when I am in a hurry I can know that what I grab quick, isn’t going to start my day off on the wrong foot.  Eating a breakfast that is healthy, and filling is key when you are a busy gal like me.  I love filling my tummy with yummy goodness like this chia seed pudding.

This is great not only for breakfast, but any time of the day.  Even as a dessert to finish off your day.

Procedure:

Step 1. In a small bowl combine the coconut milk, greek yogurt, vanilla extract and chia
seeds and whisk to combine .Make sure all chia seeds are mixed in.
Step 2. In another bowl add cherries, raspberries and honey, mix them well.
Step 3. Split both mixtures, from step 1 and 2, in half in two different bowls.
Step 4. Add one half raspberries mixture into the bowl (From step1), where the coconut
milk , greek yogurt, chia seed is, and mix together with one half of the mixture with honey
and raspberries.
Step 5.  Now, we still have half of the mixture from Step 1 and half from the mixture from
Step 2.
Step 6. Store all your mixtures in the refrigerator overnight. Is recommended to cover the
bowls.
Step 7. Next day, place inside the jar the mixtures, as shown on the pictures.
Step 8. Serve cold on the top with cereals, rasperries or cherries. My favorite is topping with a low carb granola.
ENJOY!!
